Kitchen · Roe deer · Autumn and winter
Roe deer is the finest game you can buy in the Netherlands: mild and tender. For a stew, use cuts that love slow cooking, such as shoulder and neck. After a few hours of gentle braising, the meat falls apart in a dark sauce of red wine, mushrooms and bacon.
Short answer: brown 1 kg of diced roe deer shoulder, braise it with onion, carrot, red wine and stock for 2.5 to 3 hours on a low heat, and add fried mushrooms in the last half hour.
